This unique cheese gets its name from the Vacche Rosse Red Cow, an ancient breed of Reggio Emilia cows.
Red Cows were once considered the most popular variety of cattle in the Parmigiano Reggiano production region and the original milk source for this cheese but the breed almost went almost extinct after WW1 and 2. Today there are approximately 3000 livestock producing the milk to make this cheese.
The cheese is aged a minimum of 24 months and the result is a sweet, delicate and more complex flavour.
