Cardone also called cardoon is a traditional Mediterranean vegetable considered a delicacy by many who specialize in French and Italian cuisine. This cousin to the artichoke has an edible stalk like celery, however is not eaten raw. Add to soups, fry or bake it.
From the radicchio family we have fresh Castelfranco and Treviso now available in the store.
Castelfranco Radicchio is tender and mild enough to be served raw and may be added to fresh green salads. Like other bitter radicchios it works well in cooked applications as well such as soups, pizzas and risotto or served sautéed on its own as a side dish. Its bitter flavor marries well with citrus juice, olive oil, balsamic and red wine vinegar, garlic, mushrooms, pancetta, parmigiano reggiano cheese, anchovies, black pepper and fennel.
Treviso Radicchio comes from the Italian region of Veneto. Its elongated leaves are similar to romaine lettuce or overgrown Belgian endive. Treviso is a milder form of radicchio and is prized in salads and side dishes. When it comes to adaptability, many restaurateurs in Italy feature grilled Treviso on their menus and serve it as an alternative to steak!
